Stainless steel (aka the PVD pieces) is generally considered hypoallergenic and safe for sensitive skin.

Gold fill typically does not contain nickel. However, gold fill is bonded to a base metal like brass which is not considered hypoallergenic. The edges of gold fill can expose the base metal.

If you have sensitive skin, brass and bronze may not be for you. While they don't typically contain nickel, they are not considered hypoallergenic.

Sterling silver does not contain nickel.

Solid gold, like 14k gold, can contain nickel.
